Lithuanian Christmas Eve Biscuits (Kūčiukai)
Humble, but delicious Lithuanian Christmas Eve Biscuits, known as Kūčiukai represent the taste of Lithuanian tradition over the festive period. Symbolizing prosperity and togetherness, these tiny, golden-hued treats with poppy seeds are a cherished part of the country's holiday celebrations! Our version of these Christmas Eve Cookies is extremely quick and easy to make!

- 250 g (2 cups) all-purpose flour
- 1 heaped teaspoon baking powder
- ¼ teaspoon salt
- 20 g (2½ tbsp) poppy seeds
- 100 ml (6½ tbsp) water
- 40 ml (2¾ tbsp) odourless oil like vegetable (canola) or sunflower
- 1 tablespoon honey
- 1.5 tablespoon caster (superfine) sugar
Preheat the oven to 360° F (180° C Fan). Line a large baking sheet with parchment paper.
In a large mixing bowl, mix four, poppy seeds, baking powder and a pinch of salt.
In a separate bowl (or a jug), mix cold water, oil, sugar and honey, until sugar has dissolved.
Make a well in the centre of your flour and pour the wet ingredients in.
Using your hands, mix the dough just enough to combine.
Transfer the dough onto a lightly floured worktop, and knead just long enough to bring it into a cohesive ball.
Divide the poppy seed dough into 4, and roll out each piece into a thin string-like piece (about 1cm in diameter).
Using a dough scraper or a sharp knife (careful not to scratch worktops) cut the strings of dough into small 1 cm pieces.
Transfer the poppy seed biscuits onto the tray and bake in the oven for 12-15 minutes, until golden brown (you may need to rotate the tray).
