Lithuanian Grated Apple Pancakes

- 1½ cup (175g) all-purpose flour
- 2 teaspoon baking powder
- 3 tablespoon (30g) white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract optional
- ¾ cup +1 tablespoon (175 ml) whole milk
- 1 egg large
- 2 small apples coarsely grated
- neutral oil for frying
In a large mixing bowl, combine flour, cinnamon and baking powder.
In a separate bowlk or a jug, whisk the eggs and sugar, until the sugar dissolves. Add the milk and mix to combine.
Make a well in the middle of the dry ingredients and pour in the wet ingredients. Gently mix the pancake batter until combine and no dry pockets of flour remain.
Carefully stir in the grated apples.
Heat oil in a large non-stick frying pan.
Add large spoonfuls of pancake batter into the pan and fry for around 2-3 minutes. You will start seeing bubbled coming up to the surface. Then flip the pancakes and carry on cooking for another minute. Repeat with the rest of the batter.
