1kg(2.2. lb) pork shouldercut into bite-sized chunks
1large onionsliced
4garlic clovespeeled and thinly sliced
2bell peppersthinly sliced
400g(2 cups) canned chopped tomatoes
1teaspoonsalt
½teaspoonblack pepper
1tablespooncumin
1tablespoonpaprika
2tablespoonall-purpose flour
500ml(2 cups) chicken or beef stock
Instructions
Season the pork chunks with salt and pepper.
Heat oil in a large frying pan, add the pork chunks and fry over medium heat until browned on all sides.
Scoop the browned meat into a large pot with a matching lid (keep the frying pan).
Place the pan back on low heat and add the onions (if the pan is looking fry, just add a drizzle of oil). Saute for 5-6 minutes, until softened.
Add the garlic, cumin and paprika, and stir for a minute until aromatic.
Stir in the flour, then pour about half of the stock in and scrape the pan with a spatula to make sure to get all the tasty brown bits from the bottom of the pan.
Tip the onion mixture into the pot with the pork, and add the sliced bell peppers, tomatoes and the rest of the stock. Stir well to combine, cover the pot with a lid, and place it over low heat for 35-50 minutes. Stir occasionally to prevent the bottom from catching. Enjoy!
