Lithuanian Egg Salad With Cheese

An easy Egg Salad With Cheese is one of the most popular Lithuanian salads that you will find used in different ways: be it used as a sandwich filling, or on a festive table stuffed into vol-au-vents. A simple recipe, called Pikantiskos Salotos truly brings the taste of home to me when I am feeling nostalgic!

Ingredients
  

  • 3 eggs large
  • 3.5 oz (100g) cheese we used Cheddar, coarsely grated
  • 2 garlic cloves minced
  • 3 tablespoon (60g) mayonnaise
  • 1 tablespoon parsley finely chopped
  • salt and black pepper

Instructions
 

  • Place eggs in a single layer at the bottom of a pot. Cover the eggs with cold water, ensuring they're submerged by about an inch. Bring the water to a rolling boil, then carry on cooking for about 10 minutes Transfer the eggs to an ice bath to halt the cooking process.
  • Leave the hard-boiled large eggs to cool down completely. Then peel them.
  • Coarsely grate the eggs and cheese into a large bowl. Add the mayo, minced garlic and finely chopped parsley. Season with salt and pepper.
  • Mix the cheddar egg salad until well combined! Serve immediately or store in the fridge!
