Lithuanian egg salad, also known as Pikantiškos Salotos or Pikantiška mišrainė is likely similar to a classic egg salad recipe. The main difference is that it is always made with cheese, making it the best egg salad recipe in my books (yes, I LOVE cheese!).
What is more, instead of mashing the egg yolks and finely chopping the egg whites, Lithuanian egg salad is made with coarsely grated eggs.

How To Serve Egg Salad With Cheese?
Not only does this salad make the best egg salad sandwich, but there are plenty of ways to incorporate it into other recipes:
- Make lettuce wraps by encasing the egg filling into large green leaves.
- Stuff it into buttery croissants.
- Make an egg salad wrap using wheat tortillas and plenty of crunchy vegetables.
- Fill vol-au-vents with the egg mixture and garnish them with fresh herbs for your special occasions.
- And use any leftovers to make egg salad sandwiches for lunch!

Ingredients
You will need five simple ingredients to make this traditional Lithuanian salad:
- 3 large eggs: you will need hard boiled eggs, so if you have some leftover hard-boiled eggs, there is no need to cook them fresh.
- 100g cheddar: whilst we like using sharp cheddar cheese, you may choose to use Gouda or Jarlsberg cheese for a milder flavor.
- 2 garlic cloves: adjust the quantity based on your personal preference, but traditionally this salad if quite pungent with garlic.
- 3 tablespoon (60g) good quality mayonnaise: choose your favorite brand of mayonnaise that is rich and creamy. If you wish, you can substitute up to ⅓ of mayo with sour cream.
- 1 tablespoon fresh parsley: other fresh herbs like fresh dill or chives will work too.
- salt and black pepper, to taste.

Variations
Add your own twist on a traditional Lithuanian salad by introducing a little something extra:
- Finely chop green onions or red onion and add them to the mix.
- Add a teaspoon of Dijon mustard.
- Squeeze a little bit of lemon juice.
- Finely chopped black olives go extremely well with this egg salad with cheese.
- Mix in a bit of sweet pickle relish or finely chopped dill pickles.
- My own secret ingredient is a pinch of nutmeg!

Step-By-Step Method
STEP 1: How To Hard-Boiled Eggs?
To achieve perfect hard-boiled eggs, place eggs in a single layer at the bottom of a pot. Cover the eggs with cold water, ensuring they're submerged by about an inch. Bring the water to a rolling boil, then carry on cooking for about 10 minutes for large eggs, adjusting the time slightly for smaller ones.
Finally, it is a good idea to transfer the eggs to an ice bath to halt the cooking process.
Leave the hard-boiled large eggs to cool down completely.

STEP 2: Make Egg Salad With Cheese
Coarsely grate the eggs and cheese into a large bowl. Add the mayo, minced garlic and finely chopped parsley. Season with salt and pepper.
TIP: if you are using mature strong-tasting cheese, don't add too much salt.
Mix the cheddar egg salad well until well combined! Serve immediately or store in the fridge!
