    Lithuanian Grated Apple Pancakes (Easy, Fluffy, Delicious)

    Ah, the crisp breeze of apple season is upon us, signaling the perfect time to whip up some fluffy apple pancakes, a delightful nod to the coziness of fall mornings. Picture this: a steaming stack of Lithuanian Grated Apple Pancakes, warmly spiced and speckled with shreds of tart apples, ready to be devoured by the whole family. It's the epitome of a perfect fall breakfast, don't you think?

    The World Of Lithuanian Pancakes

    If there is one type of breakfast that Lithuanians love, it's pancakes! So much so, that we often have pancakes for lunch and even dinner. If you love these apple cinnamon pancakes, full of our favorite fall flavor, we encourage you to try other delicious pancakes recipes, including Farmers Cheese Pancakes, Yeast Pancakes or Kefir Pancakes! Or maybe we can tempt you with classic Lithuanian Crepes (a.k.a. Lietiniai Blynai) instead? Maybe even crepes with farmer's cheese filling?

    Ready? Grab a bowl, a whisk and a large pan, and let's get cooking!

    Ingredients and Substitutes

    • 1⅖ cups (175g) all-purpose flour: also known as plain flour. You may substitute up to ⅓ of white flour with whole wheat flour.
    • 2 teaspoon baking powder: not to be confused with baking soda. 
    • 3 tablespoon (45g) white sugar: we used fine caster sugar, but granulated sugar will work as well. 
    • 1 teaspoon ground cinnamon. 
    • 1 teaspoon vanilla extract: optional, but recommended. 
    • 1⅖ cups (175 ml) whole milk: this recipe works well with plant-based milk too. 
    • 1 egg: large or extra large. 
    • 2 small apples: coarsely grated. We love Braeburn or Granny Smith apples. 
    • neutral oil: for frying.

    Step-By-Step Method

    Follow these easy steps to make delicious Apple pancakes. 

    1. In a large bowl, combine flour, cinnamon and baking powder.

    2. In a separate bowl or a jug, whisk the eggs and sugar, until the sugar dissolves. Add the milk and mix to combine. Add vanilla.

    3. Make a well in the middle of the dry ingredients and pour in the wet ingredients. Gently mix the pancake batter until combined and no dry pockets of flour remain.

    4. Carefully stir in the shredded apple.

    5. Heat vegetable oil in a large non-stick pan over medium heat. 

    6. Add large spoonfuls of pancake batter into the pan and fry on the first side for around 2-3 minutes. You will start seeing bubbles coming up to the surface of the pancake. Then flip the pancakes and carry on cooking for another minute until golden brown. Repeat with the rest of the batter.

    Tips For Best Results

    1. For airy and fluffy pancakes, make sure not to overmix the batter. Overmixing will result in a tough and flat pancake. 
    2. Give the batter a brief rest of 5-10 minutes before cooking to allow the leavening agents to work their magic, resulting in fluffier pancakes.
    3. Preheat your oven to a low temperature and keep cooked pancakes warm on a baking sheet while you finish cooking the batch; this is a great way to maintain their fluffy texture and warmth.

    What To Serve Grated Apple Pancakes With? 

    The most traditional way to serve Lithuanian pancakes is with a generous dollop of sour cream and jam or fresh fruit. But a perfect breakfast for me as a child was Grated Apple Pancakes served with plum jam and Greek yogurt!

    Alternatively, these pancakes taste really good with some creme fraiche and brown sugar sprinkled all over. Or you can serve them American style, with lots of maple syrup drizzled on top! We also love these pancakes with cubes of stewed apples (let me know in the comments if you would like a simple recipe for them).

    Leftovers & Storage

    If you have leftover Grated Apple Pancakes, let them cook to room temperature, then place them in an airtight container and store them in the fridge for 3-5 days. They can be gently reheated in a toasted oven.

    Ingredients
