    Lithuanian Cottage Cheese Sauce For Potato Pancakes

This Lithuanian Cottage Cheese Dip is one of the simplest — and most beloved — options. Made with cottage cheese, fresh herbs, garlic, and green onion, it’s a fresh, tangy alternative to the traditional dollop of sour cream.

    I grew up seeing bowls of this dip appear next to all sorts of potato dishes. It’s quick to make, refreshing, and somehow manages to make even the humblest fried potatoes feel like a complete meal.

    Ingredient Notes

    Cottage Cheese. Use full-fat cottage cheese for the best flavor and texture. Lithuanian cottage cheese (called grūdėta varškė) usually has slightly larger curds in milky liquid than some versions found in grocery stores elsewhere.

    Fresh Dill. Dill is one of the most common herbs in Lithuanian cooking and pairs beautifully with potatoes. Finely chopped fresh dill adds brightness and a subtle grassy flavor. You may replace with dried or frozen dill, too.

    Green Onion. Thinly sliced green onions add freshness and a mild onion flavor without overpowering the dip.

    Garlic. A small clove of garlic gives the dip a gentle kick. If you prefer a milder flavor, use half a clove or grate it very finely.

    Salt and Black Pepper. Season lightly at first, then adjust to taste once everything is mixed.

    Cottage Cheese (Grudeta Varškė) vs Farmer's Cheese (Varškė)

    Lithuanian dairy products can sometimes be confusing because the names don’t translate perfectly.

    Grūdėta varškė literally means “grainy cheese” and is closest to what most people know as cottage cheese. It has small curds suspended in a little whey and is often eaten fresh with herbs, fruit, or bread.

    Varškė, or farmer’s cheese or curd cheese, is quite different. It’s much drier and more compact, with a crumbly texture. Farmer’s cheese is widely used in baking and cooking — especially in dishes like pancakes, dumplings, and pastries.

    Step-By-Step Method

    1. Prepare the ingredients. Finely chop the fresh dill, thinly slice the green onion, and mince the garlic clove.

    2. Combine the dip. Place the cottage cheese in a small bowl. Add the chopped dill, green onion, and garlic.

    3. Season. Sprinkle in a pinch of salt and freshly ground black pepper.

    4. Mix. Stir everything together until evenly combined. Taste and adjust seasoning if needed.

    5. Serve. Serve immediately, or refrigerate for 15–20 minutes to allow the flavors to develop.

    Serving Suggestions

    This cottage cheese dip is most commonly served with Lithuanian pLithuanian cottage cheese dip with dill, garlic, and green onion — perfect with potato pancakes, kugelis, and other classic Lithuanian potato dishes. The cool, creamy texture balances the crispy, fried potatoes perfectly.

    Ingredients
      

    • 200 g (7 oz) cottage cheese large-curd cheese is more typical in Lithuania
    • 1 tablespoon fresh dill finely chopped
    • 1 green onion thinly sliced
    • 1 small garlic clove minced
    • salt and black pepper to taste

    • Place all the ingredients in a small bowl and mix to combine.
