I’m wondering if you have any insight into a Lithuanian pancake recipe mystery for me . My late Lithuanian grandmother, would make the most amazing pancakes. She would serve them with plum jam & powdered sugar , the pancakes were unusual- they were quite yellow & had very crispy edges . They were light as air . Not your heavy thick pancake .She would fry them in oil . I have spent the last 15 years trying to recreate them . I have added extra yolks , used seltzer water …. read every cook book possible on that region . Had my mom ask relatives if they know anything about these pancakes . Basically everyone thinks I’ve become a bit nuts trying to figure it out . So please forgive me for this long message , but if you know anything about these pancakes, I’d be eternally grateful!!! Lithuanian pancakes have so many regional and family variations, and those special touches, like extra crispy edges and that sunny yellow color, make me think your grandmother’s version might have been her very own special take.
The bright yellow color could come from using several egg yolks (as you’ve tried) or even farm-fresh eggs with rich, golden yolks. Some recipes also use a mix of sour cream and a little sparkling water for lightness. I wonder if she might have whipped the egg whites separately to make them airy? That’s a trick I’ve seen in some old Eastern European pancake recipes.
Sorry, I don’t have this exact recipe from my own family, but you’ve inspired me to dig deeper and test some variations. If I manage to come close, I’ll definitely share it here 🙂
